Mit diesem Natives Olivenöl Extra erhält die Küche eine präzise Säurenote, die sich in Dressings, Marinaden und Abschluss-Tropfen erprobt. Olizumo bedeutet auf Deutsch "Olivensaft". Für das DOP Extra Virgen Olivenöl werden ausschliesslich Picual-Oliven verwendet, die im grössten Nationalpark Andalusiens, den Sierras de Cazorla, Segura y Las Villas, in der Provinz Jaen geerntet werden. Das intensiv gold-grüne Öl duftet nach Gras mit Noten von Thymian, Buchsbaum, frischer Minze und Fenchel, unterlegt von Feigenblattaromen. Am Gaumen ist es zuerst süsslich, dann entfalten sich grasig-würzige Noten, die im Finale in einen fruchtigen Geschmack münden. Alle Öle durchlaufen zahlreiche Qualitäts- und Geschmackstests. Die Picual-Oliven werden bei Aceites Guadalentin ab November temperaturkontrolliert kaltgepresst.
