Il sorso è armonioso e scattante, vibrante nella parte tannica e di lunga persistenza.Una parcella storica, quella di Bartolomeo, dà vita all’omonimo Langhe Nebbiolo “Bartolomè” DOC di Borgogno. È un Nebbiolo che dopo la vendemmia fermenta spontaneamente ad acino intero in vasche di cemento, per poi riposare almeno un anno in grandi botti di rovere di Slavonia. Scattante e ben determinato in ogni minimo dettaglio, è un Nebbiolo pensato per far esaltare tutte le peculiarità del varietale e tutte le sfumature del territorio. È un Nebbiolo autentico.
Da scegliere insieme alle carni rosse, è ottimo con il bollito misto alla piemontese.
